I’m having some issues with my five month old kitten recently and a lot of the solutions I’m seeing are for cats with four working legs (Milano only has two).
Also, if there isn’t a site, we should definitely make one.
Some easy but not-so-quick vegan junk food is the best for relieving midweek stress.
Not-Really Scalloped Potatoes;
-Red potatoes, thinly sliced*
-Yellow onion, thinly sliced*
-Fresh jalapeño, thinly sliced* lengthwise (optional, but recommended)
-Daiya cheddar (or other vegan cheese of choice)*
-Sunflower oil (or other non flavorful oil)*
Preheat oven to about 425f.
Grease pan with oil and put down the first layer of potatoes. Sprinkle with salt and pepper, and then drizzle oil over the top. Layer onions on top. Put down another later of potatoes and sprinkle with salt and pepper, then drizzle with oil. Add another later of onions and add the jalapeño slices. Cover with foil and bake for about 15-20 minutes, or until potatoes are totally cooked.
Grate Daiya over the top and cover again. Bake for another five minutes, or until cheese is melted to your liking.
Serve once cool enough to eat (this dish is also really good cold, so leftovers aren’t a problem)
*note* use as many or few potatoes, onions, and jalapeños as you need for your layers. I used 3/4 of a block of Daiya and it was more than enough. Everything else is to taste.
